First of all, boil the semolina with milk as follows:
Put 500 ml of milk to boil - when it starts to boil, add the semolina "in the rain", stirring constantly with a whisk, so that they are not lumpy. Make a low heat and simmer for 5 minutes - stirring regularly.
Step 2
After those 5 minutes turn off the heat, add the butter and let all this cool, melt, swell - 30 minutes.

Then pour this mixture into a bowl in which you will make the pancake dough, add a flavor, salt and sugar - mix well.
Step 4
Pour the remaining 250 ml of milk, mix.
Step 5
Then add the eggs, mix well to incorporate them - you can also use the mixer.

Add flour and baking powder - mix well.
Step 7
A tablespoon of oil, stir.
Step 8
And just before you start baking them, add mineral water or boiling hot water.
Step 9
Heat the pancake pan well - pour a little oil and to remove the excess oil, wipe the pan a little with a paper napkin. The pan will be greased exactly for pancakes.

Pour about a pinch of dough, let it bake over medium heat - when you notice the reddish edges take a toothpick and gently pass it through the edge of the pancake to separate it from the pan.

Gently grasp with your fingers or a spatula and turn the pancake on the other side - leave for 5-10 seconds.

Then turn it over on a flat plate and see how you arrange them.

Because the pancakes come out tender and soft at first, it is no longer necessary to build them one on top of the other to soften and burn them. As soon as I take them out of the pan, I arrange them nicely for serving.
So - fold the pancake in half.
