Cherry Crumble
I like fruit pies a lot, but most of the times I don't have time to make the batter and to assemble everything into a pie. In this case, my solution is the crumble recipe, a sort of quick cake, with a crumbly dough and oat flakes (a big plus for us), you can eat it with the spoon and it's so, so good. I loved the combination of crumble and cherries, it can also be combined with sour cherries, jut be careful that they are not that sweet, so you'll need more sugar.
We served this cherry crumble with Greek yogurt, vanilla ice cream is another possibility, but the kids chose to have it as such. I liked it best when it was warm, about an hour after it was removed from the oven. Of course, served cold from the fridge the next day is not bad at all.

Pitted cherries

Step by step
Step 1
First of all, pit the cherries and place them in a big bowl.
Step 2
Add 30g sugar (about 2-3 tbsp), vanilla extract and the juice from a lemon. I recommend also adding 1 tbsp cornstarch to the fruit, this will thicken a bit the juice from the cherries and so the crumble will have the best consistency.
Mix everything with a spoon.
Step 3
Grease a deep oven dish with oil, transfer the cherry mixture and spread to make an even layer.
My dish is 20x30cm.
Step 4
Take from the fridge 70g butter and grate it through the big-holed side.
Step 5
Stir in 70g sugar, 70g flour and 70g oat flakes (large or fine) and 1/2 tsp salt.
Step 6
Quickly use your fingers to blend this mixture, until it becomes crumbly and the butter is absorbed by the flour.
Step 7
Sprinkle this crumbly dough over the cherries in the oven dish and distribute evenly.
Bake in the oven to 200 degrees C for 40-45 minutes.
Step 8
After that, remove from the oven, let chill in the dish for about 1 hour, then serve with Greek yogurt or ice cream.
