Ingredients

White flour

use the same 250 ml glass or cup everywhere in the recipe to measure the ingredients

Chopped Nuts
1 cup
any nuts you prefer: peanuts, walnuts, seeds

Dried fruits
1 cup
here I used raisins, cranberries and chopped dates

Step by step
Step 1
First prepare the ingredients - notice that I'm using the same 250ml glass/cup to measure flour, sugar, nuts and dried fruits.
Step 2
On a plate, mix flour, baking soda and a pinch of salt.
Step 3
In a bigger bowl, beat eggs with sugar until a white foam forms.
Step 4
Incorporate the flour mixture and slowly mix with a whisk or a spoon until you get rid of all the lumps.
Step 5
Add in the chopped nuts and the dried fruit and stir.
Step 6
Transfer to a baking sheet, base lined with parchment paper.
Step 7
Then carefully, using the handle of the spoon, spread the mixture evenly, about 1 cm thick.
Notice that it doesn't have to cover the whole surface of the baking sheet from one edge to the other, you only want it to be 1cm thick so, once you have it, stop spreading the mixture. It won't lose its shape while baking.
Step 8
Bake in the preheated oven to 180 degrees C for 15-20 minutes.
As soon as it's ready and you remove it from the oven, immediately start to cut it in rectangles or triangles, or any other shape you like. You want to be quick, because once it cools, it gets harder to cut.
