Chocolate Magic Cake
Here we go, by popular demand, I present to you the super recipe for the chocolate magic cake, or the intelligent cake - you name it! I've been planning and testing for a long time and, eventually, I stuck with this version, which I warmly recommend.
The thickness of the magic chocolate cake will vary depending on the size of the cooking tray you are using, mine is 25x25cm. And maybe you might want to avoid using a pan with removable sides, that's what I did and it was hard to take out of the oven.
One more thing. Notice that I use the mixer only for beating the egg whites, for everything else I use a classic whisk, as the batter is rather liquid and and I don't want you to blame it on me for the splashing all over the kitchen!

125 g
melted and cooled butter

Vanilla Extract
1 tsp

Step by step
Step 1
Separate the eggs in 2 different bowls.
Step 2
With a mixer, beat the egg whites to stiff peaks.
Step 3
Add the sugar and the vanilla extract to the yolks and stir well using a whisk.
Step 4
Keep mixing while you pour in the melted butter little by little.
Step 5
Incorporate the flour and the cocoa powder and keep whipping.
Step 6
Notice now that the batter is a bit more dense and that's how it's supposed to be.
Step 7
Incorporate the milk in 3-4 rounds and keep whisking well each time, so that there won't be lumps.
Step 8
Now the batter will become runny and I do not recommend using the mixer because it splashes a lot.
A simple whisk will do the job, safe and clean :)
Step 9
Now transfer the stiff egg whites and blend it in the batter.
It will be hard with the spoon, so I suggest using the whisk.
Step 10
This is what the batter should look like in the end.
Step 11
Tip it in a 25x25cm cake pan, already lined with parchment paper or greased with butter.
Distribute the batter evenly in the pan and smooth over the surface.
Step 12
Bake it for 1 hour in the pre-heated oven to 160 degrees C.
Finally, press with your fingers the middle part of the cake and, if it's not wobbling, you can take it out of the oven.
Step 13
Let the cake completely cool, this will make it easier to cut.
Step 14
A closer look at the inside, the pieces of cake are firm and they can be grabbed easily - a great thing for the kids.
Step 15
As you can see, the cake is not difficult to make and it's really delicious. It's already among our favourites, but especially among my favourites - it's very quick and everybody finds it lovely :)
