Strawberry Chia Pudding

I've been a big fan of chia pudding from the very first spoon and I want to say that the first things I liked were the taste and the texture. After that, I started reading about chia seeds and saw the list of nutrients and benefits they contain (omega 3 and 6, antioxidants, magnesium, iron, calcium, phosphorus, potassium etc.). If you take a look at the recipe, you'll see it's so easy that you can even make it with the children. You can let your imagination run wild when you decorate the pudding or when you decide the final taste you want etc.

Because the pudding can be prepared cold, it's also a very quick dessert. It only takes as much as the liquid is absorbed by the seeds (30 minutes - 1 hour). Below I had coconut milk, but you can make delicious chia jelly with your favorite juice. Coconut milk can be replaced with any milk or whipping cream you like. Use flavors, sweeteners, cocoa, fruits, colors - all according to your tastes and preferences.

This time I made chia pudding with strawberries and it was a hit - in the serving glasses I poured 1 layer of simple pudding with vanilla and coconut milk and a second layer of strawberry puree and milk. You can successfully use frozen strawberries or other fresh/frozen fruit here.

Ingredients

Milk
1 l
use any normal or vegetable milk you prefer, whipping cream or fruit juice/puree
Chia seeds
200 g
the amount may vary, depending on the texture you want - more liquid or denser
Strawberries
300 g
or other fruits, fresh/frozen
Natural sweeteners
4 tbsp
you can use honey, sugar of any kind, birch sugar (xylitol), stevia, erithritol - all to taste
Food flavours
1 tsp
essence: vanilla, almonds, lemon etc. - also to taste

Step by step

Step 1

In a large bowl, pour the milk or liquid you will use in the pudding. The liquid can be at room temperature or from the refrigerator.

I divided it into 2 bowls, for 2 puddings in 2 different colors.

Add in the chia seeds. Start with 100g of seeds for 500ml of milk and see if the pudding is thick enough. I was surprised to find that the seeds from some brands would swell very quickly and for the others, I had to wait.

Here I used Chia Seeds from Sanovita, in 30 minutes it was already clear to me what the texture would be like.

Mix the composition well with a whisk and set aside.

For the strawberry pudding, I pureed the fresh fruit in a blender.

In another bowl, I combined coconut milk, 500ml, and strawberry puree, 300ml. The pudding came out a little more liquid than the one with the seeds, but still good. I didn't add more than 100g of chia, although there was more liquid.

Adjust the sweetness of the taste for both mixtures - I'm on a carb-free diet and I sweetened it with xylitol (birch sugar).

You can also add some vanilla essence or seeds.

Observe how the pudding thickens after 30-60 minutes. If it's still liquid, add more chia seeds.

As I said above, the soaking time varies from one brand to another, use the desired texture as a guide.

Now pour the pudding into individual glasses or bowls - first the fruitless layer and the strawberry pudding on top.

You can serve it right away, but you can also keep it in the fridge until you need it - it stays well for 2-3 days.

I garnished it with mint leaves and slices of fresh strawberries. The children liked it a lot, but it was a delight for us too.
