Step by step
Step 1
Prepare the fish by cleaning, washing, and cutting it into pieces. Marinate it with lemon juice and set aside.
Step 2
Slice carrots and bell peppers.
Step 3
Finely chop the garlic and dice the tomatoes (or blend if using fresh).
Step 4
In a deep frying pan or saucepan, layer half of the peppers, carrots, and garlic.
Step 5
Place the fish on top of the vegetables, season with sugar and salt, and add the tomatoes.
Step 6
Add the remaining vegetables.
Step 7
Prepare the spices - paprika, turmeric, coriander, and ginger.
Step 9
Briefly sauté the spices in the oil, for 3-4 seconds.
Step 10
Pour the spiced oil over the fish and vegetables.
Step 11
Add 1 cup water and cook on low heat for 20-30 minutes.
Step 12
Adjust seasoning and simmer for an additional 20 minutes.
Step 13
Stir in chopped parsley and let it rest off the heat.
Step 14
Serve with rice for a complete meal.
