Enjoy these simple, vegan cookies that are perfect for children. With a delightful flavor that falls somewhere between gingerbread and biscuits, they are a healthy and tasty treat. With only 2 tablespoons of oil, these cookies fit well into various diets.
In a bowl, mix oat flour and well-drained raisins.
Blend peeled apples, water, oil, sugar, baking powder, vanilla extract, lemon juice, and a pinch of salt until smooth.
Add the blended mixture to the bowl with oat flour and raisins.
Mix well with a spoon to create a liquid dough.
Let it sit for 30-40 minutes until it thickens. If the dough is too thin to form balls, add more oat flour or white flour.
If the dough is sticky, grease your hands with oil and form dough balls. Place the balls on a Teflon tray or a tray lined with baking paper.
Press the dough balls slightly with a spoon soaked in oil.
Keep them thick to prevent from becoming too dry and hard after baking.
Bake in a preheated oven at 180°C for 30-40 minutes until lightly browned.
Allow the cookies to cool slightly before serving.
Enjoy with tea, milk, or coffee.
Good appetite!
