Step by step
Step 1
Boil the coffee, leave it for 10 minutes then strain it (250ml) into a larger bowl or cup.
Add 1 glass of sugar, 2 tablespoons of honey and mix well with a tablespoon until the sugar is completely dissolved.
Step 2
Pour the coffee mixture into the bowl in which you will make the dough.
Add the walnuts.
Step 3
Dried fruits follow - I put dried apricots and black raisins.
Then add the baking soda (does not quench) and salt - mix well.
Step 4
Then add the flour and mix well with a whisk.
Step 5
You should get a dough like thicker cream.
Step 6
Pour it into a cake pan lined with baking paper or in a 26 cm round shape.
Put it in the oven for 1 hour at a temperature of 180 degrees.
Step 7
If at some point during baking it browns too much to put an aluminum foil over it, so as not to burn it.
But keep the baking time to the maximum, being with honey and baking soda you have to bake more than the classic cakes.
Step 8
I made this cake twice, the first time I didn't have baking soda and I put baking powder. It turned out completely differently, grandfather but it didn't grow very well and it was whiter, you can see it in the picture.
So honey and baking soda are mandatory together!
Step 9
Here with honey and baking soda - see also the browner color specific to baking with honey, it is even higher than the one with baking powder.
Allow to cool well then serve.
