A simple, fragrant, tasty and interesting cake, very good for the fasting period and not only. Here I used dried fruit, but you can also use frozen fruit, I think it would be even better.
Wash the oranges well, from one of them grate the peel in a bowl.
Then squeeze 100 ml of juice from them and mix it with grated peel.
Add the baking soda to the bowl of juice, notice that it will foam.
In another bowl measure and mix the oil and sugar.
Add the juice from step 2 and water, stir.
Put flour, mix with a whisk so that they are not lumpy. You should get a dough like thicker cream.
Add the chopped walnuts (I didn't put them) and the fruit - here I put black raisins, apricots and dried currants - mix.
Pour the dough into a 28-30cm diameter tray and bake for 35-40 minutes at 200 degrees.
Then let cool, remove from the pan and portion as you like.
