These very simple pancakes, ordinary, even, were unexpectedly good and fluffy. The husband realized they were Lenten only when he finished eating. Served with some vegan chocolate spread or favorite jam, they will be appreciated by all family members.
Put all the ingredients in a bowl (except for the oil, which is used just for frying).
Mix well with a whisk until there are no lumps.
Cover the bowl with a lid or towel and let rise for one hour.
Notice that the batter has risen and has air bubbles.
Careful! Do not mix at all after the batter has risen!
Heat well a non-stick pan and grease with a little oil (I used a brush to avoid excess oil). You can also fry them in the classic way, with more oil, if you like it and if your pancreas is OK with that :)
Spoon out some batter (unmixed!) into the pan and fry over medium heat.
Brown well on both sides.
There will about 12-13 pancakes in total. If you have active eaters in the house, you'd better make double portion :)
They are very soft, fluffy and tasty - serve with your favorite jam or with chocolate cream.
