A delicious and aromatic potato dish that can serve as a stand-alone meal or a delightful side. These potatoes are easy and quick to prepare, offering a flavorful experience that everyone will appreciate.
For those avoiding the use of wine in their cooking, feel free to omit it.
Cut the potatoes into medium cubes and place in the oven tray.
Sprinkle with salt.
Add the garlic cut in half - do not grind it too hard, so it doesn't burn in the oven.
In a bowl, mix the mustard with the oil and wine.
Pour this mixture over the potatoes, add curry (turmeric and cumin if you like and have them) - mix well with your hands or a spoon.
Cover with aluminum foil and bake for 20 minutes at 200 degrees.
You may skip covering, but I find that it helps them cook better and faster.
After 20 minutes, stir the potatoes a bit and leave them uncovered in the oven until they're fully cooked, approximately another 15 minutes.
Stir again if needed to prevent excessive browning at the bottom.
Serve as a side dish accompanying meat, or enjoy as a main dish with some salad or pickles.
