This jam cake recipe is one of the most delightful discoveries I've made recently. Its uniqueness comes from the interesting use of jam.

The dough is enriched with vanilla pudding powder, resulting in a fantastic texture! My husband compared it to a panettone, noting its fine, fragrant, and tender quality. He even claimed it's the best cake I've ever made.

Ingredients

Egg

Sugar
80 g
   
White flour
170 g
   
Baking powder
2 tsp
   
Vanilla pudding powder
20 g
half a 40g sachet - can be replaced with plain starch.
Milk
40 ml
   
Butter
80 g
softened to room temperature
Jam
8 tbsp
or thicker jam - adjust quantity to taste

Step by step

Step 1

Mix the flour with baking powder and vanilla pudding powder.

Beat the egg whites together with the sugar.

Add the flour mixture to the egg mix and blend.

Next, incorporate the milk and softened butter and mix thoroughly to achieve a thicker dough, resembling a thick cream.

Line a 28 cm (or 26 cm) baking tray with parchment paper. Pour the dough into the tray and spread evenly with a spoon.

Using a teaspoon, place small quantities of jam over the dough sporadically. Avoid using overly liquid jams.

Bake the cake in a preheated oven at 200 degrees for 30-35 minutes until it turns golden brown. 

It bakes quickly, so check to ensure it doesn't overbake!

Once cooled, remove from the pan and dust with a bit of powdered sugar (optional).
