A simple, tasty, quick, and safe dietary dessert! I truly enjoy this version because it is egg-free, uncomplicated, and perfect for those short on time.
I wouldn't have thought that gelatin combined with milk (or even water!) could create such a fluffy and delicate soufflé.
Keep in mind, it might not set with every type of gelatin, for a dietary version, sweeten it with xylitol or stevia, or use sugar and any flavors like cocoa or coffee for a more exciting taste.
By the way, 100g of this dessert has only 30 Kcal! Enjoy!
In a bowl or glass, soak the gelatin in cold milk, check your package for the precise time; mine specified 15 minutes.
After soaking, pour the mixture into a small saucepan. Add sweeteners and flavors—I used xylitol, vanilla, and saffron.
Heat the mixture thoroughly (be careful not to let it boil!) until the gelatin completely dissolves.
Set the pan aside to cool, refrigerate for 10 minutes or freeze for 3 minutes.
It needs cooling but should not become too firm due to the gelatin.
Pour the milk into a deep bowl with splash protection (or a deeper bowl).
It can splatter a bit, so use patience or cover the bowl, my Tupperware bowl has such a lid.
Now, watch the clock and whisk the soufflé at full speed.
It generally takes 7-10 minutes; be patient :)
Aim for a firm, fluffy foam.
If the milk doesn’t whip up, pour into small bowls for a delightful milk jelly.
Try again with different gelatin or flavors, and be cautious during cooling.
Pour into a food wrap-lined bowl and chill for at least an hour.
It sets quickly, so pour and refrigerate the soufflé swiftly.
Once set, turn it onto a plate and portion it out.
It can also be served directly from beautiful bowls.
