Bird's Milk Souffle
An easy, delicious, quick and safe dietary dessert! I really like this variant, because it does not contain eggs, it is simple and a great find for those in a hurry.
I wouldn't have even realized that gelatin in combination with milk (maybe water!) Can make such a fluffy and fragile soufflé.
I understood that it might not come out with any kind of gelatin - I used Dr. Oetker's and it was perfect. In the dietary version it is sweetened with xylitol / stevia, in the simple version with sugar and any flavor / cocoa / coffee you prefer to make it more interesting.
By the way, 100g of cake has only 30 Kcalories! Good appetite!

Step by step
Step 1
In a bowl / glass put the gelatin to soak in cold milk - the time is usually indicated on the package - to me it said 15 minutes.
Step 2
After this time pour the composition into a small saucepan, add the sweeteners and flavors - here I put xylitol, vanilla and saffron.
Step 3
Heat the composition well (be careful not to boil it!) Until the gelatin dissolves completely.
Set the pan aside to cool well - you can put it in the fridge for 10 minutes, or in the freezer for 3 minutes.
It should be left to cool, but still not stick to the gelatin.
Step 4
Pour the milk into a bowl that has splash protection - or a deeper one.
Sprinkle quite a bit, so be careful - or be patient and then wipe or use something to cover the bowl, with the hole in the middle.
I used a Tupperware bowl that had such a lid.
Step 5
And now you look at your watch and start beating (at full speed) the soufflé.
It is usually done in about 7-10 minutes, so be patient :)
Only once did he not beat me because I dropped the milk and got the gelatin, and I put a lot of cocoa.
Step 6
Such a foam must come out, preferably as hard as possible.
If the milk does not beat - pour it into small bowls and you will have a delicious milk jelly.
And try again with another gelatin, other flavors, be careful when cooling.
Step 7
Pour into a bowl lined with food-grade plastic wrap and refrigerate for at least an hour.
It hardens very quickly, so move quickly by pouring and refrigerating the soufflé.
Step 8
When it has caught well, turn it over on a plate, bottom and portion.
It can be put directly in beautiful bowls and served.
Step 9
And a fluffy slice for you :)
Although I have written many explanations, everything is quite trivial and simple, definitely worth a try.
