Oatmeal Cookies with Farmers Cheese
A recipe that I started very skeptical and a bit confused, it seemed a bit trivial and it seemed to have nothing good with such ingredients. But because I had an expired cheese in the fridge and some oatmeal, I said I'd better do something with them than throw them away.
And I was amazed when I tasted them, the texture looks like a gingerbread, a little soft, and very, very tasty.
On the 2nd day I made a triple portion, being dietetic they are a small find for the sweet cravings, but they stick to the waist.

Step by step
Step 1
Put the cheese, egg, sugar, salt and olive oil in a blender.
Blend well to be a uniform paste.
Step 2
Mix the oatmeal with the baking powder.
Step 3
Add to the flour the cheese paste from the blender, the ground walnuts and the washed raisins.
Step 4
Mix well with a spoon or with your hands.
Here it seemed to me that I would add a little more flour (I also had more liquid cheese), but I was called by Sofia for 10 minutes from the kitchen and when I came back the oatmeal did its job well - it swelled a little and made coca Harder. So if the dough is wetter you can leave it for 10-15 minutes and it will be firmer.
Step 5
With wet hands (if the dough sticks to your hands, wash and grease them with oil) take a little dough, form dough balls and flatten them a little.
Place the biscuits thus formed in the oven tray.
Step 6
Bake them at 180 degrees, on the upper step of the oven (they tend to brown faster at the bottom). And leave for about 30 minutes, until they start to brown slightly. Don't "tan" them too hard, they will be stronger.

Let it cool, and enjoy the extra pounds without worry :)
