Oatmeal Cookies with Farmers Cheese
I started this recipe with skepticism and confusion, doubting the merit of its simple ingredients. Yet, with some expired cheese and leftover oats at hand, I chose to create something delicious rather than wasting them.
I was pleasantly surprised after tasting them, finding a texture reminiscent of gingerbread that was soft, yet incredibly tasty.
The next day, I tripled the batch. These diet-friendly treats are perfect for a sweet craving, but be mindful of your waistline.

Combine the cheese, egg, sugar, salt, and olive oil in a blender.
Blend until smooth and uniform.

Mix the oat flour with the baking powder.

Add the cheese mixture, chopped walnuts, and rinsed raisins to the flour blend.

Mix thoroughly with a spoon or hands. If the dough seems too wet, let it sit for 10-15 minutes; the oats will absorb the moisture and firm up the mixture.

With damp hands, form small balls from the dough, flatten slightly, and place them on a baking tray.

Bake at 180°C on the oven's upper rack for about 30 minutes until the cookies start to turn golden. Avoid over-baking to keep them soft.
