Oatmeal Cookies with Seeds
With my hand on my heart I tell you that I don't think I ate better biscuits - they have a perfect texture - crispy, airy, sweet, fragrant. I didn't identify their taste well, until my husband asked me if I somehow put halva in them.
So they taste like halva and browned seeds in butter - in 2 days I managed to make them 2 times and every time I run away from the plate - Sofia eats them with great speed.
The first time I put the ingredients strictly according to the recipe, the second time I improvised a little and I liked it even more. I combined several seeds and to the composition of wholemeal flour I added 2 tablespoons of ground flax seeds.

Ingredients

Sunflower seeds kernels
150 g
can be combined with pumpkin seeds, almonds, walnuts, flax, etc.

Whole wheat flour
50 g
you can add here 2 tablespoons of flaxseed flour - If you do not have wholemeal flour, you can put plain white flour

Butter
125 g
to be relatively soft
●
Oat flakes
150 g

Step by step
Step 1
Fry the seeds on a dry pan until lightly browned.
Step 2
Let them cool a bit and then grind them in a food processor or blender.
Don't even make them flour, so that the pieces are coarser.
Step 3
The flour is mixed with baking powder, and possibly flax flour.
Step 4
In a bowl, mix the soft butter with the sugar, add the egg and mix a little more (with the mixer).
Step 5
Add vanilla, ground seeds, flour mixture and oatmeal.
Step 6
Mix the composition well, first with a spatula / spoon then with your hands.
Don't be afraid if the composition is coarse and a little sticky, that's right.
Step 7
Take a little dough in your hands, although it is sticky, it can be shaped quite well - form biscuits in any shape you like.
I made round classics and some kind of bars.
Step 8
Leave in the preheated oven at 180 degrees, for 25-30 minutes, until the edges start to brown better.
Allow to cool.
Step 9
Then take them out of the pan and enjoy ...
Here is the first round - only with sunflower seeds and a few almond-shaped sticks.
Step 10
Here the 2nd round, and better - with a mixture of pumpkin seeds, sunflower seeds and walnuts - 50g of each.
Absolutely delicious, in the future I will make 2 servings at once, as one is not enough for us :)
