It is very important for those who fast (or vegetarians) to choose foods carefully, to be a diversified diet with basic nutrients needed by the body.
We don't fast, but because I really want to put fasting recipes on the site, I don't have many other products in the fridge - and every time I am amazed at how tasty vegan food can be cooked with a little imagination and correct information.
So these chickpea patties are simple, good and very healthy - they can be just with chickpeas - I had soy after a round of soy milk and I used it here. I served them with a lettuce and a little Vegan mayonnaise (ready in 5 minutes) - super good!
Chickpeas and soy are prepared:
- soak in water overnight
- then boil in a larger amount of water for a few hours, possibly added to the chickpeas a little baking soda for faster boiling
- cool and drain the water in which they boiled.
Add the onion and slices of bread soaked in water and well drained.
Add the spices, salt and pepper.
You pass them through the food processor or through the mincer.
You will get a paste like this, taste and adjust salt / pepper if necessary.
Always make sure to drain the chickpeas and bread well - this composition should not be too liquid.
Form the meatballs and arrange them in an oven tray - lined with baking paper.
I have a good Teflon tray and I don't put paper anymore. I tried to make them in the pan as well - they don't work, they break and they don't do well.
So, in the oven with them - 200 degrees - 30 minutes, brown the bottom well.
Then with a spatula turn them on the other side and leave them in the oven for another 10 minutes.
They are good to serve hot - not too hot or cold - then they have the perfect texture and taste.
They are extraordinary and cold in sandwiches, with some salad and fasting mayonnaise.
