Chickpea and Soy Burgers
For those who are vegan or observe fasting, choosing nutrient-rich foods is essential for maintaining a varied and healthy diet.
While we do not follow a fasting diet, I enjoy sharing fasting recipes and am often surprised by the deliciousness of vegan meals crafted with creativity and the right ingredients.
These chickpea patties are easy to make, delicious, and highly nutritious. They can be made solely with chickpeas, but I added soy after making soy milk. I served them with salad and a bit of Vegan mayonnaise (ready in 5 minutes) - absolutely delightful!
Ingredients

Cooked chickpeas
500 g
or canned

Cooked soy beans
200 g

White bread

I used 2 slices of wholemeal bread

Salt and pepper
1 tsp
adjust to taste

Curry powder
1 tsp
add other spices like garlic, dried parsley, etc.

Step by step
Step 1
Prepare the chickpeas and soy:
- soak overnight in water
- boil in ample water for a few hours, adding a bit of baking soda to the chickpeas for faster cooking
- cool and drain the cooking water.
Step 2
Add the onion and water-soaked, well-drained bread slices.
Step 3
Add the spices, salt, and pepper.
Step 4
Process everything in a food processor or grinder.
Step 5
You'll get a paste like this; taste and adjust salt/pepper if needed.
Ensure chickpeas and bread are well-drained; the mixture shouldn't be too watery.
Step 6
Form the patties and place them on a baking tray lined with parchment paper.
I use a non-stick tray, so no paper needed. They didn't work well in a pan as they broke apart.
Bake them in the oven at 200 degrees Celsius for 30 minutes until the bottom is well-browned.
Step 7
Flip them using a spatula and bake for another 10 minutes.
Step 8
Serve them warm for the best texture and taste, but they also make amazing cold sandwiches with salad and vegan mayo.
