Pea puree is often underrated as a quick and simple dish, yet it offers a delicate, fine, and flavorful garnish that even Sofia enjoys.
In the vegan version, simply sauté a little onion with oil, leaving out the butter.
I've experimented with both canned and frozen peas, both of which work well, though frozen peas tend to be a bit sweeter.
Place the butter and oil in a pan and heat thoroughly.
For the vegan version, sauté finely chopped onion in oil and skip the butter.
Add the frozen peas, stirring well, and let them simmer for 15-20 minutes until fully thawed and cooked through.
Season with salt and pepper, then turn off the heat.
You can add other herbs, but avoid overwhelming the pea's natural flavor.
Blend the peas thoroughly using a food processor or blender.
It's ready to serve in your preferred style.
