These wonderful chocolate (and vegan!) cookies are quickly and easy to make, from ingredients at hand. They are dense and chewy, which is why they are so much loved by children. I'd say they are among the most appreciated fasting cookies of all the recipes I've tried, and rightly so.
Baking time is ten minutes in the preheated oven at 200 degrees C. In order to avoid any questions in the comments - it is enough, just follow the recipe instructions correctly and you'll have tasty, special and fasting chocolate chip cookies.
First of all, when you start the recipe, preheat the oven to 200 degrees C.
In a bowl, combine the flour with cocoa, baking powder and salt.
In another bowl, mix the jam, sugar and oil.
Add half of the dry ingredients to the bowl with the jam. Mix with a whisk or a spoon.
Then mix in the rest of the dry ingredients, but not all at once - in two or three rounds so that the dough isn't too hard.
For me, these quantities were just enough, I didn't have any flour mixture left at all.
Knead the dough for two or three minutes. You'll have a very nice and soft dough, not sticky at all.
With your hands, break pieces from the dough and shape into balls. Then, lightly press them into biscuits about 1cm thick. Arrange on a nonstick baking pan or on a pan lined with parchment.
Place in the preheated oven and bake for ten minutes - no more!
When you remove the biscuits from the oven, they will seem soft, but just leave them in the tray to cool completely.
You'll notice they have the perfect texture. If you keep in the oven longer, they will be too hard.
