This is a unique recipe that may surprise you. The ingredient combination might not seem appealing at first, especially since they were intended as diet cookies, but after tasting, the "Wow!" factor kicks in.
These cookies are crispy, hearty, with a subtle ginger aroma. All the elements blend perfectly, and the best part is that kids love them too. Sofia enjoys eating five at once!
Gather your ingredients - 1 cup of oatmeal, 1 cup of rye flour, and 1 cup of finely grated carrots (about 2 medium carrots).
In a bowl, mix the dry ingredients - oats, rye flour, baking soda, salt, sugar, and carrots.
Add the walnuts and freshly grated ginger, then mix using a spoon or your hands.
Finally, incorporate the sunflower oil and mix thoroughly with your hands.
Knead the mixture for about 5 minutes until the dough is cohesive and slightly sticky. If it's too crumbly, add a little more oil.
Take small portions of dough and shape them into walnut-sized balls.
Flatten them slightly to about 8-10mm thick. The dough is sticky, so wash your hands periodically. Using disposable gloves can speed up the process.
Arrange the cookies on a Teflon tray or lined with baking paper.
Bake at 200 degrees Celsius for about 30 minutes, or until nicely browned.
Allow them to cool completely before serving with tea or milk - simply delicious! If served warm, they may be softer.
Enjoy!
