Step 1
Gather your ingredients - 1 cup of oatmeal, 1 cup of rye flour, and 1 cup of finely grated carrots (about 2 medium carrots).

In a bowl, mix the dry ingredients - oats, rye flour, baking soda, salt, sugar, and carrots.
Step 3
Add the walnuts and freshly grated ginger, then mix using a spoon or your hands.
Step 4
Finally, incorporate the sunflower oil and mix thoroughly with your hands.
Step 5
Knead the mixture for about 5 minutes until the dough is cohesive and slightly sticky. If it's too crumbly, add a little more oil.
Step 6
Take small portions of dough and shape them into walnut-sized balls.
Step 7
Flatten them slightly to about 8-10mm thick. The dough is sticky, so wash your hands periodically. Using disposable gloves can speed up the process.
Step 8
Arrange the cookies on a Teflon tray or lined with baking paper.
Step 9
Bake at 200 degrees Celsius for about 30 minutes, or until nicely browned.
Step 10
Allow them to cool completely before serving with tea or milk - simply delicious! If served warm, they may be softer.
