They are my grandmother's pies, in fact she called them "pumpkin pies" and they were always made during the pumpkin season, together with the bread in the wood oven. In addition to an oven full of bread, there had to be 1-2 trays of potato pies and 1-2 trays of pumpkin pies and another kind of baking.
It can be made with any kind of simple bread dough - I made it with homemade bread dough, when you make another loaf, try some pumpkin pies, you will surely like it and you will repeat.
The pumpkin is cleaned, washed and passed through a medium grater.
Make the bread dough, follow all the steps in the recipe.
When ready, form small balls, about 3-4 cm in diameter and let them rest.
For the 4-mesh oven tray, I make 9 of these balls, for 9 pies.
Spread each ball with the rolling pin (help yourself with a little flour), to be about 3 mm thick.
Grease them in the middle with a little oil - the edges do not grease, you will not be able to form and glue them.
Put a handful (about 3 tablespoons) of grated pumpkin on each pie.
Put 1 tablespoon of sugar on top (if you want them sweeter you can also put 2 tablespoons).
Grab the opposite edges of the pie, see the picture.
Slightly loosen the remaining corners, bring them to the middle and glue them.

Do this with all 4 corners.
Arrange the pies in an oven tray greased with a little oil.
Do not let them grow, put them immediately in the preheated oven at 200 degrees and leave for 30-40 minutes.
After they brown nicely, take them out of the oven and immediately grease them with a little oil (sunflower, odorless).
Leave them in the tray for 10 minutes then remove them with a spatula.
The pumpkin juice may flow and caramelize, the pies may stick to the tray, be careful to remove them carefully.
Cool them well, then cut in half and serve with great appetite :)
