These pancakes turned out wonderfully! They're slightly thick, flavorful, soft, and just a bit oily due to the oatmeal. Plus, they're easy to make. Just remember to soak the oatmeal and semolina for 2 hours before preparing the pancakes.
In a bowl, combine the oatmeal and semolina.
Add the kefir, mix thoroughly with a whisk, and let it sit for 2 hours to soften.
After 2 hours, add the rest of the ingredients and mix well to prevent lumps.
Heat a pan and lightly grease it with a little oil using a brush. Pour 1 tablespoon of batter into the pan.
Cook on medium heat. When air bubbles form and the surface is no longer liquid, flip to the other side.
Brown the pancakes nicely on both sides.
Continue with the rest of the batter. No need to grease the pan each time (I used a non-stick pan).
