Recipe with no. 501 I said to be this delicious pie with leeks and cheese, the recipe received from a family with whom we became friends at the cooking workshops and which is very dear to me.
I haven't made much leek pie so far, and it's a shame, it's very delicious, simple and good-looking - this leek season. If you don't really like leeks, you can put any filling, even plain cheese (possibly with onions) because I liked the dough here the most. I haven't made such a perfect pie dough in a long time and I really recommend it to you - although you can replace it with commercial or homemade puff pastry.
The leeks are cleaned, washed and cut into small slices.
Then put it to harden together with finely chopped onion, 2 tablespoons of oil, 1 cup of water. Leave until there is no liquid in the pan.
Allow to cool well, then add the chopped cheese, eggs, salt (taste if necessary, the cheese is already salty) and spices (I just put pepper).
Stir, this will be the filling for the pie.
Now we quickly make the pie dough.
In a bowl pour 250ml of warm water, add 1 teaspoon of sugar and 1 teaspoon of salt.
Then the yeast and about 150g of flour - mix well with the aim to get a mayo like liquid cream to consistency.
Let it rise for 15-20 minutes.
After it has risen, add 1 egg, 4 tablespoons of oil and flour gradually - be careful not to add all the flour at once. Knead and add a little until the dough catches, about 500g in total should be.
Remove the dough on the table sprinkled with flour and knead a little more.
Divide into 2 equal parts and leave to rest for about 10 minutes.
Then I spread a sheet of a ball of dough and put it in an oven tray greased with oil.
Lift the edges a little and put all the filling, evenly distributed.
Then I spread the second sheet and put it over the filling. gently grasp the edges if possible.
Grease the surface of the pie with an egg yolk and prick it with a small fork.
Bake in a preheated oven at 180-200 degrees for about 40 minutes.
Then take it out of the oven, cover it with a towel and let it cool well.
Serve hot or cold (so it is cut much better and nicer) and enjoy with the whole family :)
