This quick and delicious dish can be prepared in about 15 minutes, helping you keep your time in the kitchen short. It's incredibly tasty and wonderfully light when paired with green pea puree, making this a perfect, healthy meal option.
Heat the oil in a deep pan—ensuring it's thoroughly heated is crucial.
Then add the chicken breast, sliced thin and long, and stir.
After 5 minutes, add the zucchini cut into thick julienne strips, stirring occasionally.
Five minutes later, add the soy sauce, dried parsley, and pepper. Stir and cook for an additional 2 minutes.
Careful with the salt, as the soy sauce is already salty, so you won't need much extra.
Your dish is ready. Avoid overcooking, as it might seem underdone, rest assured it's perfectly cooked.
Otherwise, the zucchini might become mushy.
Serve it on the pea puree or with a side of your choice, such as a salad or your favorite garnish.
Or serve the pea puree separately from the main dish.
