Pies are my weakness, I like to make them, eat them and I always try to learn new and tasty options.
I've been making them for about 3-4 months, when I feel like pies, but quick and to use the yogurt that expires through the fridge. They are WONDERFUL, even if I'm not a fan of cooking in oil, you won't even realize it they are tender and not even oily.
In a bowl pour the yogurt, add salt and baking soda - mix and set aside for 10 minutes.
After this time add the flour and start kneading the dough.
First mix with a spoon until the flour catches - if the dough comes out too liquid and soft, add more flour. You should get a soft, slightly sticky dough.
Remove the composition on the table sprinkled with flour and knead lightly until you get a uniform and soft dough.
Divide the dough into about 15 equal pieces.
On the table sprinkled with flour, form dough balls, set them aside and grease them with a little oil.
Leave them to rest for about 25-30 minutes, they should not be covered, the oil on the surface will not let them dry.
Meanwhile, prepare the filling - in a bowl mix the cheese, greens, eggs and salt to taste.
I would recommend making it a little saltier than you like - for pies, dumplings this is how it is done, because the dough still takes in salt.
After the balls have rested, take one and flatten it with your hands a little - to be about 8-10 cm in diameter.
Put about 1 tablespoon of filling in the middle.
Bring the edges to the center and grasp them with your fingers.
After you have caught them all, glue them well and lightly press on the formed ball - to be about 1 cm thick at the end.
This will be the final pie, which we will fry in hot oil. The rest of the pies are formed in the same way.
Heat a frying pan well with oil and brown the pies on both sides. The oil should be heated well so that it is not absorbed into the dough and pies - but after you put the pies on the pan, reduce the heat and make sure you turn them over in time.
Here I started with 1 pie on the pan, but it takes a while to make them all.
But I got tricked and started putting 3 on the pan.
Along the way, put them on top of each other and serve them hot or cold - they are good in any way.
Delicious, soft, fluffy - Sofia as she sees them and takes them from the plate - we usually convince her to eat, here you really shouldn't :)
