Begin by separating the egg whites from the yolks.
In a separate bowl, mix the flour with baking powder.
Measure the milk in a graduated glass.

Using a mixer, beat the egg whites until stiff peaks form.

Beat the yolks and sugar mixture well with the mixer.

Incorporate about 1/3 of the milk, mixing thoroughly.

Follow with about 1/3 of the flour, ensuring it's well mixed.

Continue the process, alternating between adding milk and flour until both are fully incorporated.
Then, mix in the salt and, if desired, vanilla essence.

Gently fold the egg whites into the batter, careful not to deflate the mixture.

Heat a non-stick pan, pour in about half of a ladle of batter for each pancake.
Cook over moderate heat until air bubbles appear on the surface.

Turn the pancakes with a spatula and brown for another 2-3 minutes.
Step 11
Continue with the remaining batter to make 7-8 pancakes.
Step 12
Serve the pancakes hot, accompanied by your choice of jam or honey.
