Simple, healthy and even dietary foods are very welcome now (you know why!). This salad is like that - simple and quick to prepare, delicious, healthy and very balanced in terms of calories and nutritional values. It can be a salad and even a food, because the proteins in chickpeas will give it a pretty good satiety.
Cut the red onion into rounds and sprinkle with lemon juice or a little vinegar. Allow 10-15 minutes to soften and marinate.
The peppers can be baked or grilled, peeled and put in a salad.
Or ... I cut them into juliennes and hardened them with a little oil on the pan - it was just as delicious.
And we start gathering all the ingredients in a bowl - first go the water-drained chickpeas.
Add sliced tomatoes, hot peppers, pickled onions and finely chopped greens.
And the last ones are sliced olives - you can put simple olives or calamatas - they will give a more interesting taste.
Prepare the dressing for the salad - in a bowl mix: oil, honey, mustard, crushed garlic, juice of half a lemon and salt, pepper to taste.
Add the dressing to the salad, mix well and adjust if salt is needed.
Serve it with any food you like or as such - it is tasty and filling.
