A very fine, fluffy, tender and tasty pie - you don't even realize it's vegan. The jam can be whatever you have and you like, it is mandatory to consider the dough for other pies as well - it works very simply and pleasantly.
Dissolve the yeast with half a glass of warm water and leave for 10 minutes.
Meanwhile, mix the flour with the sugar, vanilla, lemon peel and vinegar.
Add the dissolved yeast in step 1.
Then add the rest of the water (half a glass) and the oil. Mix the dough well with a spoon and you will see that it becomes uniform and becomes very pleasant to the touch.
Take it out on the table and knead for about 10 minutes.
Put the dough in a bowl or bag (make a small hole for air to escape through it) and leave it in the fridge for 1-2 hours.
While the dough is resting, do your homework and quickly prepare the filling: mix the walnuts with the jam and mix well. I put some cherry jam ...
And I added a few tablespoons of raspberry jam, for finer color and flavor. The filling should be thicker, but neither too dry nor too hard.
Take the dough out of the fridge and divide it into 2 equal pieces. Spread a sheet about 2-3 mm thick (from each piece of dough), the size of the oven tray.
Place the sheet in the tray greased with a little oil and spread it lightly with your hands to cover the entire surface. Pour the filling and start to spread it lightly on the dough.
That's how the filling should come.
Cover with the second sheet of dough and glue the edges well.
Leave the pie with a preheated oven at 150-180 degrees until it browns nicely - about 35-40 minutes.
After removing it from the oven, cover with a towel until it cools down well.
Then portion it as you like and serve with great appetite for a tea ....
