Very good, even extraordinarily good - I saw the recipe at the restaurant where I did my internship and as soon as I came home I applied it. It is prepared in a simple way, but a small detail and there are already no roasted potatoes but Lyonnaise Potatoes.
Peel the potatoes, wash and cut into medium cubes.
Put the potatoes in a deep baking tray.
Sprinkle a little salt, pepper and paprika. Add 100 ml of ulel and mix everything well, so that each potato is covered with a little oil and spices.
Put an aluminum foil over the potatoes and put the tray in the preheated oven at 200 degrees - for about 1 hour.
During this time we prepare the onion - clean it, wash it and cut it into juliennes.
Put a little oil, onion and onion in a deep frying pan and let it cook well.
When the onion is lightly browned, add the wine or brandy - stir.
Allow the alcohol to evaporate for about 2-3 minutes, stir periodically, add a little salt and pepper - turn off the heat.
Remove the potatoes for about half an hour and mix with a spatula. When they have penetrated and are soft (check if the knife enters them easily), remove the foil from them and leave them in the oven for another 15 minutes.
When they are ready, take them out of the oven, add the onion over them and mix lightly with a spatula.
Let it bake for another 15 minutes on low heat.
You can serve them simple with a salad.
Or more seriously - a piece of meat / fish.
