My suggestion today is a simple yet interesting salad, a combination of prawn with green leaves, pineapple and some yellow cheese+eggs for a more whole taste. Besides that it's quick to make, it also looks spectacular on the festive table and the prawns are absolutely eye-catching.
You can prepare the sauce to your taste - I usually combine mayonnaise with Greek yogurt, but you can always stick to the classic mayo.
First, I recommend boiling the prawns - 2-3 minutes in the hot boiling salted water will be enough.
Use a slotted spoon to remove from the water and place onto a plate.
Sprinkle with a little lemon juice on top and let cool completely.
Prepare the salad dressing. I normally combine together jarred mayonnaise with Greek yogurt and a bit of salt to taste.
Prepare the rest of the ingredients for the salad:
- wash and dry the green leaves;
- boil and peel the eggs etc.
Now we start to assemble the salad.
On a large and beautiful platter arrange the first layer of greens.
Spread over the pineapple cubes.
Drizzle with the dressing we just prepared.
Cut the boiled eggs into medium cubes and add to the salad.
Toss with some more mayo dressing.
Finely grate the yellow cheese over the salad and arrange nicely.
At the end, place the prawns on top and the salad is ready.
It can be served right away or in a few hours.
