This recipe is always associated with me with my grandmother from Ukraine, I know it from there and I learned to make it when I went on vacation - it is one of my grandmother's favorite desserts. And it has every right to be - it's made very quickly (if you have pancakes already made and left in the fridge somewhere).
I recommend making them for a round of pancakes - the little ones and the big ones will surely appreciate them - in addition, they can be made with sweet filling and salted cheese filling.
Please note, pancakes should be served hot or warm.
Then make the cheese composition - mix the cheese with eggs, sugar / salt, vanilla and optionally you can put some raisins.
And now it is assembled, so that the cheese does not flow from the pancakes:
- take a pancake, put it on the table or on a flat plate and put about 1-2 tablespoons of cheese on the edge.
Lightly cover the cheese composition with the edge of the pancake.
Bend the side edges and pass them over the cheese composition.
And now we run starting with the edge where the cheese was placed.
Because the pancakes are best served hot, make these cheese rolls just before frying or roll them up and leave them in the fridge until you need them.
Put the butter in the well-heated pan, let it melt but not completely - be careful not to burn it, it will spoil the taste of the pancakes.
Arrange the pancakes in the pan so that they are with the edges down and let them brown over medium heat.
Brown them nicely on both sides, then take them out on a plate and they are ready to serve - with some favorite cream or jam.
