Step by step
Step 1
Peel a squash, grate it and cut it in half.
Step 2
Separate the egg whites from the yolks in 2 large bowls.
Step 3
Add the 10 tablespoons of sugar to the yolks and beat well with the mixer until white foam.
Step 4
In a smaller bowl, prepare a little hot boiling water and a spoon.
Step 5
Turn on the mixer again and while the yolks are beating, add 7 tablespoons of hot water one by one - beat well after each tablespoon.
Step 6
Then beat the egg whites separately - to pass the test with the overturning of the bowl - if they are well, they are ready.
Step 7
Add the egg whites to the yolks and carefully and slowly mix with movements from top to bottom.
Step 8
Then add the flour and also, very slowly and carefully mix all the dough - with movements from top to bottom.
And ready, that's all the dough for the cake.
Step 9
To the cherries add 2 tablespoons of starch or flour and mix - so as not to leave the juice and color in the cake.
Step 10
In an oven tray lined with baking paper (you can optionally grease the paper with a little oil or butter), pour the dough, spread it evenly over the entire surface.
Place the previously prepared cherries on top, spread evenly all over.
Step 11
Bake the cake over medium heat - 180-200 degrees for 20 minutes - then you can leave it for another 5-10 minutes on a low heat 150-130 degrees.
Make sure it is done very quickly.
Step 12
Then take it out, let it cool, portion and serve garnished with a little powdered sugar.
