Easy Microwave Vanilla Cake
The cake is tasty, fluffy, with the aroma of milk, vanilla and coconut - you will notice its texture even after the presentation picture. The filling is prepared in the microwave, as well as the cream according to the Quick Milk Buttercream on the site. It took me about an hour to do everything - the countertops, the cream and assemble it.
Note - if you have a tray 26-28 cm in diameter (silicone, glass or ceramic), you will make 2 countertops. If the tray is 20-22 cm, a countertop is enough to cut in 2, only the cake will be smaller. I made it in a round silicone tray from Tupperware, 28 cm in diameter.
I will give the ingredients for a single countertop - if you make 2, double the quantities.

100 g
butter to be soft at room temperature

if you don't have coconut replace it with the same amount of white flour

Step by step
Step 1
Mix the soft butter (I put it in the microwave for a while and it melted a little harder, but it worked anyway) with the powdered sugar.
Step 2
Then add the eggs and mix well with a whisk or mixer.
Step 3
Then flour, coconut, baking powder and salt - mix well and finally add the milk, mix all the composition.
Step 4
Pour the dough into a tray greased with butter (although mine is silicone, I said grease it anyway).
Step 5
Place the tray in the microwave and cover it with the plastic microwave lid. Turn on the microwave at about 600-800W for 6 min.
Step 6
After this time, remove the top from the microwave and leave it in the tray for 5-10 minutes.
Step 7
After this time you can take out the countertop on a plate or grill and make the second countertop in the tray with the same ingredients. Here you see in the picture 2 countertops, I let them cool until I made the cream.
Step 8
Prepare the cream according to the Quick Milk Buttercream Recipe . Let it cool a little, but not much, it must be warm - it will soften the cake better.
Divide the cream into 2 equal quantities and with one of them grease the first cake top.
Step 9
Then put the second countertop, grease it with the other amount of cream - leave about 2-3 tablespoons of cream for the edges of the cake.
Step 10
Level the cream on top, lightly grease the edges of the cake, garnish with coconut.
Allow the cake to soften and penetrate for at least an hour - if you are impatient you can serve it in 20-30 minutes.
