Step 1
Prepare the garlic by cutting it into long pieces for easy insertion into the meat.
Step 2
Use a knife to make deep holes in the pork loin.
Step 3
Insert a piece of garlic into each hole, ensuring it is pushed deep into the meat.
Step 4
Continue until the entire piece of meat is studded with garlic. Add as much garlic as possible for enhanced flavor.
Step 5
Place the pork loin in a tray lined with aluminum foil, leaving extra foil on the edges for wrapping.
Sprinkle the meat with salt and pepper, rubbing it thoroughly on all sides.
Step 6
Wrap the meat tightly in the foil.
Place the tray in the oven and cook at 200–220°C (390–430°F) for 1.5 hours.
Step 7
Prepare a flavorful sauce to glaze the pork loin. Combine mustard, tomato paste, soy sauce, a pinch of salt, and dried herbs.
Step 8
After 1.5 hours, remove the pork from the oven and unwrap the foil. Check that the meat is nearly cooked through.
Step 9
Generously brush the sauce over the top of the pork loin.
Step 10
Return the meat to the oven, uncovered, and bake for an additional 30 minutes to create a golden-brown crust.
Step 11
Let the pork loin rest for 10–15 minutes after removing it from the oven. This allows the juices to settle.
