An unexpectedly good appetizer, I made it just out of curiosity but I liked it so much that I will surely make it on other occasions. The most important thing is that it is prepared super fast, with simple ingredients and looks very good at a festive meal.
Bring the chicken breast to a boil, when it starts to boil, turn down the heat and leave for 30-40 minutes. Then take it out on a plate and let it cool.
During this time we prepare the omelette for the roll.
In a bowl put 3 tablespoons of mayonnaise, 3 eggs, 3 tablespoons of flour and a pinch of salt. Beat well until smooth.
Here you can see what the omelette dough looks like. From this quantity I made 2 omelets, it was enough for a festive meal.
Heat a pan greased with a little oil, pour half the amount of dough and leave over medium heat until golden brown.
Then turn it over carefully with a spatula and brown it a little on the other side.
Remove the omelette to a plate and allow to cool slightly. You also prepare the second one.
Now we prepare the final roll like this.
Take an omelet, grease it with a little mayonnaise, if you prefer you can add crushed garlic in it.
Chop the chicken a little and put it over the mayonnaise. Sprinkle the chopped walnuts over it as well.
Finely chop the parsley and sprinkle with the rest of the ingredients.
Roll everything well and also prepare the 2nd roll.
Then before serving the roll, cut it and decorate with your favorite greens.
It's super delicious. I was very sorry then that I only made 2 rolls, it was eaten very quickly and well.
