This light and delicious Wholemeal Wheat and Rye Flour Banana Bread is a delightful surprise. It offers a taste remarkably similar to Classic Banana Bread but with a healthier twist. If you prefer a sweeter flavor, feel free to add half a cup of sugar.
In a bowl, mix all the dry ingredients - whole wheat flour, rye flour, chopped walnuts, baking powder, baking soda, cane sugar, and salt.
In another bowl, combine the liquid ingredients - eggs, yogurt (or buttermilk/kefir), cottage cheese, vanilla extract, sunflower oil, and finely chopped banana.
Add the liquid mixture to the bowl of dry ingredients.
Mix the dough thoroughly. If the consistency is too thick, add more yogurt to achieve a dough that resembles thicker cream.
Pour the dough into a large cake tin, or two smaller tins lined with baking paper. Note that the cake will rise significantly.
Bake in the oven at a medium temperature for about an hour, or until well browned.
Leave the cake in the pan for 10 minutes, then turn it onto a rack or plate to cool completely.
Slice the bread and, if desired, sprinkle with a little cinnamon.
