This is a perfect alternative to classic meatballs. Scotch eggs are faster and easier to prepare and look much better on a plate with appetizers.
Ground the meat, if you haven't already bought minced meat.
Peel an onion, cut into small pieces and cook for one minute in oil.
Add the crushed garlic and half the amount of chopped greens. Cook for 4-5 minutes.
Drain the oil from the cooked vegetables. Add them to the minced meat, together with the rest of the greens, salt and pepper.
Mix well everything together.
Divide the mixture into 6 parts.
Flatten out each part with your palms. Place a boiled egg in the middle.
Carefully shape into a ball, with the egg in the middle. This way you shape the six balls.
Combine the two eggs with mustard. Beat.
Coat each ball with breadcrumbs.
Dip the balls in the egg and mustard mixture.
Then coat with breadcrumbs again. Fry the balls in oil on all sides until well browned.
After that, bake in the preheated oven for another 15 minutes.
Place in the fridge and allow them to cool properly. Then serve the scotch eggs with any vegetable garnish or as an appetizer at a festive meal. I sliced them and they looked like meat roll with eggs.
