Step by step
Step 1
Put the sugar and soft butter in a bowl in which you will prepare the dough. Mix well with a spoon or with your hands, to incorporate both well.
Step 2
Separate the egg whites from the yolks, put the last ones over the sugar with butter.
Step 3
Mix well the butter + sugar + yolks.
Step 4
Mix the flour with the baking powder and add both in the above ingredients. Mix well to blend.
Step 5
Beat the egg whites until stiff, do the test with the return of the plate - if they do not flow, they are ready.
Step 6
Add the egg whites over the ingredients from the first steps.
Step 7
Mix slowly and carefully, moving from top to bottom until the egg whites are incorporated into the dough.
Step 8
Lay a tray of about 28 cm with baking paper, pour 2/3 of the dough into it. Then arrange the apricot halves over the dough.
Step 9
Spread the remaining 1/3 of the dough well over the apricots and bake the cake.
Step 10
Leave in the oven for about 40 minutes, at medium temperature, until golden brown. Then take it out and let it cool well. Very good and warm and cold the 2nd day (if it remains :))
