Step 1
Wash the eggplants and cut the slices as thin as possible, about 2-3 mm.
Step 2
Then sprinkle a little salt and your favorite dried spices over the eggplant slices.

Do the same with the zucchini - cut the slices and sprinkle with spices and salt.
Step 4
And finally the tomatoes - also cut and sprinkled with salt and pepper.
Step 5
In a deeper baking dish, arrange the vegetables as in the picture, alternating the vegetables one by one. Then sprinkle with olive oil all over the surface.
Step 6
Keep the vegetables in the oven for about an hour, at first about 15 minutes you can put an aluminum foil on top - then remove it to brown the vegetables well and reduce the water in them.
Step 7
The vegetables are served hot or cold, sprinkled with greens and juice, or any favorite sauce.
