A traditional Polish-Ukrainian food, I learned how to cook them when I used to visit my grandmother in Ukraine. They are a kind of potato pancakes, very quick to make and even quicker to eat.
They are delicious with garlic sauce, sour cream or yogurt - I recommend trying them, you'll like them for sure.
Peel the potatoes, wash, grate and squeeze the juice.
Use the medium hole side of the grater.
Add 2 eggs, salt and pepper to the potatoes.
And 2 tablespoons of flour.
Stir the mixture well with a spoon or even with your hands, so that all the ingredients are incorporated.
Now start frying them: heat the oil in a pan and scoop some potato mixture with a spoon.
Place in the pan and flatten the fritters so that they have a round shape, like the pancakes.
Cook over medium heat until brown on both sides.
When they are ready, transfer to a plate lined with paper towel, to absorb excess oil.
They are very good hot - with garlic sauce, sour cream or yogurt.
