A very good cake, although it may seem more complicated to prepare, I assure you that it is not - the result is absolutely delicious and worth all the effort.
First we will make the dough:
Sift the flour and mix with the baking powder.
Melt 100g of butter, let it cool a little.
Add 1/3 cup of sugar, 1 tbs of vanilla extract over the butter - mix everything well.
Then add 1 tablespoon of cocoa, mix well so they are not lumpy.
In this composition beat 1 egg, mix.
Add flour and make a dough that does not stick to your hands.
Take 1/3 of the dough and put it in the freezer. We will spread the other piece in the tray.
Grease a 20x20 or 18x25 tray with butter. Spread the dough evenly - I made it with my hands, the dough is softer, and it will be lighter that way.
Now we will prepare the cheese mixture:
Melt 30g of butter.
The egg whites are separated from the yolks by 3 eggs. Put the egg whites in the fridge.
Mix the cheese well with a spoon, so that there are no muzzles. If you have drier cheese, pass it through a sieve.
Add the rest of the sugar and 1 tbs vanilla extract to the cheese, mix well.
Mix the yolks well with a spoon.
Add melted and cooled butter over the cheese mixture - mix well.
Then add the yolks, stir.
Wash the raisins, add over the cheese. Now add 1 tablespoon of starch.
Mix well.
Whisk the egg whites.
Add them to the cheese composition and mix carefully with a spoon.
Now pour the cheese mixture over the dough previously spread in the tray. Level well.
Grate the dough that was in the freezer over the cheese composition in the pan. Use the medium grater.
Leave the tray in the oven at about 180 degrees - 30 min. Then take it out and let it cool.
After cooling it, portion it and enjoy it :)
