Step 1
Wash the zucchini, cut into medium-sized cubes.
If they are older, peel them and seeds, and then use what is left in the stew.

Put in a deep frying pan with a little oil, cook well over medium heat - until soft and browned.
Stir periodically.

Cut the onion into small pieces and cook with a little oil.
Step 4
When the onion is lightly browned, add the diced tomatoes. Mix well and let the tomatoes soften well.
Step 5
When the zucchini are ready, put the onion with the fried tomatoes on them and mix well.
Step 6
Add sour cream, salt and mix again. Let it boil well for 5 minutes, then turn off the heat and let it cool a little.
Step 7
As I said before, it is good and hot and cold, with a garnish of potatoes, rice, meat, etc.
