I made this recipe for the first time and I was very impressed - and not only me.
It is very fluffy, with honey aroma, crunchy pieces of nuts and fragrant apples. I will definitely make it as often as possible for my family - my husband told me that it is the best cake I have ever made!
In a bowl, mix the flour with the baking powder, baking soda and salt.
In another bowl add 2 eggs and the sugar.
With a mixer, beat the eggs with the sugar, about 3-5 minutes until they become white foam.
Pour the oil and honey into the composition of eggs with sugar.
It would be good to follow this order - first the oil then the honey, so the honey does not stick to the walls of the cup and pour it easily.
Then grate the peel of a lemon, in the composition of eggs, sugar, oil and honey. Mix well.
In a glass, mix 2 tablespoons of lemon juice with 2 tablespoons of water.
Put the mixer on low speed and in 3 rounds add in the egg composition, 1/3 of the lemon juice - beat well, then 1/3 of the flour composition, beat. And so on until you finish the lemon juice and the flour mixture. A dough will come out like a thicker cream.
Wash the apples, peel and cut them into cubes.
Cut the walnuts into small pieces.
Add them to the dough, mix well.
Put baking paper in a round shape of 26-28 cm. Grease the walls of the tray with a little oil.
Pour the dough in the pan, bake at medium temperature until browned - about 30-40 minutes.
Remove it from the oven, check with a toothpick if it is ready. Leave to cool for 10 minutes.
Remove it from the pan, sprinkle with powdered sugar, let it cool a bit.
It is good and hot and cold.
