Last month I was asked for a suggestion of a cake with apples and poppy seeds so, after running a couple of tests, I came up with the right recipe, quick and simple. It's a soft, fluffly and savoury cake. The poppy seeds will add a bit of crunchiness to the texture but, if you don't like that, you can skip or replace with walnuts.
Wash, peel, core the apples and cut into medium sized cubes.
In a bowl, combine the softened butter and the sugar, mix well with a whisk or the mixer.
Then add the 3 eggs in turn, stirring well after each one.
In the same way, incorporate 6 tbsp oil, one after the other.
Now stir in the flour, baking powder and poppy seeds, mix well.
The dough should be like yogurt or like thick sour cream.
At the end, add in the vanilla extract and the apples, mix to combine.
Line a springform tin with parchment paper, this one is 28 cm in diameter. Tip batter into the tin and even out with a spoon.
Bake in the preheated oven at 180 degrees C for 45-50 minutes or until nice golden brown.
Remove from the oven and let cool for at least 1 hour before serving.
Carefully unmould the cake, slice and taste, it's so delicious and flavourful.
