Pizza is always a good example of a quick meal much appreciated by everybody. It can be cooked the classic way, with basic ingredients, or one could improvise and create new toppings and interesting combinations. This spinach pizza is more than just a test now, it has even become our kids' favourite. It never lasts too long because it's very popular every time I cook it.
I like to prepare this recipe with fresh spinach, or I buy salad baby spinach, when out of season. Another possibility would be frozen spinach, thawed and thoroughly drained before. Then, for the easiest version, you need to have 2 types of cheese - cream cheese (such as Philadelphia, Almette etc.) and a simple yellow cheese. If you want extra taste, you must try the blue cheese - it will bring a slightly spicy touch, in a perfect combination with the rest of the ingredients.
Notice I also added walnuts, it's optional, kids don't like it, but my husband and I simply love it, so it's up to your preferences. You can use any kind of pizza dough - the classic, or the Italian one.
First of all, of course, prepare the pizza dough, following any recipe you want - the classic, the Italian or the sourdough version.
Mix 40ml olive oil with crushed garlic and a pinch of salt. Brush the pizza dough with this mixture.
Then sprinkle 1-2 handfuls of grated yellow cheese on top - whichever you prefer.
Now arrange the spinach leaves - don't be afraid to put more, they will shrink a lot while baking.
Among the spinach leaves, use a spoon to add cream cheese. There is no need to spread it, just some little dollops scattered here and there.
Optionally, add some bits of blue cheese, if you have and if you like it.
Sprinkle with a bit of olive oil on top.
And some more grated yellow cheese - not too much, just enough to squeeze a bit the rest of the ingredients.
Optionally, you can add chopped walnuts, they will bring extra taste and a slightly crunchy texture.
Now bake pizza at 200 degrees C or more, either on the baking sheet or on a pizza stone/the back of a heavy baking sheet placed in the oven - following Gennaro's pizza method.
Baking time may vary - from 10 minutes (in a wood-fired oven) up to 20-25 minutes (in the classic oven on a baking sheet) - it depends on how it is baked.
Either way, it is served warm and with great pleasure :)
