Yogurt with Honey and Walnuts - Greek Dessert
The title sounds so simple and I used to combine yogurt with honey all the time even before going to Greece, but after reading some Greek blogs I discovered it was a little more to it than that and the result is a wonderful dessert, quick and healthy. I really wanted to try yogurt with honey in 3 several taverns and it was made quite superficially in all of them - too much honey thrown over some plain Greek yogurt and, in one place, some barely visible walnuts scattered here and there...
Well, everything changes if you add vanilla to some good Greek yogurt and the nuts mix definitely roasted before in a pan. Only after preparing the dessert this way, right here, in Greece, in our kitchen on the seaside, did my husband finally tell me he understood why I'd made so much fuss about it. The dessert was simply devoured, good quality walnuts make such a big difference, so don't skip this step.
Ingredients

Greek yogurt
500 g
pick any yogurt you like, but it shouldn't be too runny

Vanilla Extract
1 piece

Nuts
150 g
any nuts you prefer and I recommend mixing them

Step by step
Step 1
Place the nuts in a dry skillet, roast until golden brown and let cool.
I used a mix bought from the store - cashew, almonds, walnuts and hazelnuts.
Step 2
I recommend using a knife to cut the nuts in bigger pieces.
If you prefer the blender, make sure it won't turn them into powder.
Step 3
Now tip yogurt into a bigger bowl and mix with vanilla extract.
I managed only to find this vanilla powder here in Greece, I wasn't very pleased with it, but it was better than nothing.
Step 4
Transfer yogurt to small bowls or some good looking glasses/cups.
Step 5
Spread over the toasted nuts mix.
Step 6
Pour in as much honey as you like and want.
Honey too needs to be good quality, but you knew this already, didn't you?
Step 7
It must be served immediately - important thing to know, otherwise, the honey will disssolve in the yogurt and it won't look the same anymore.
I've noticed the nuts mix can also be added after the honey, first put the yogurt + honey + nuts, but this is entirely up to you, it's good either way - refreshing, light, nice, flavourful, just perfect!
