In order to make good gyros, we need the soft and flexible Greek pita bread. When I was in Greece, I made a stock of 2 bags and I stored them in the freezer. Here, I sometimes find them in supermarkets in the frozen bread/buns department. I also tried to replace them with the simple Arabic flatbreads, they will do as well when the craving strikes :)
So, you will find below a quick and simple recipe, the Greek soft pita bread will certainly make an impression and you will cook a gyros even tastier than the Greek one. The complete gyros recipe is coming up next in the following days, it's brilliant, so stay tuned!
In a bowl, pour 300ml warm water, add in the yeast, 1 tsp sugar and 100g flour.
Whisk and let 10-15 minutes until a foam forms.
After this time, pour in oil, salt and the rest of the flour.
Start to mix/knead the dough with a spoon.
Turn dough onto floured table and continue to knead with your hands until it is smooth.
Place dough back in the bowl and let rise for about 1 hour.
Notice how in 1 hour it triples its volume.
Remove dough from the bowl, cut in 8 equal parts and shape 8 balls.
Let rest on the table for 10 minutes.
Use the rolling pin to roll out each ball into a circle of about 24-26cm in diameter.
Heat up a skillet and brush it with a bit of oil, before you cook each pita bread.
Now place a pita bread in the skillet, over medium heat and pinch the air bubbles with a fork.
Cook them until golden brown on both sides.
Repeat the procedure for all pitas and put them in a pile to keep them warm and flexible when bended.
Of course, you can serve them with any food, not just with gyros :)
