These crispy baked chicken wings have a secret ingredient which you never thought you'd find here - baking powder! I was so intrigued and I cooked the recipe without expecting great results. But I wasn't right, it's brilliant and I really recommend trying it - if you don't want wings, you can use skinned chicken legs. Besides, for baking the chicken, there is no need for oil or any other calorie additions or carbs. We became addicted to these chicken wings and the kids are delighted (so take care with the garlic and use sweet paprika).
You can adjust this recipe to your own taste, mix any spices you like, but you mustn't forget about the baking powder - it's what makes the wings really crispy. If you like them spicy, use hot paprika instead of sweet and serve them with a yogurt sauce to make them less hot. I made a simple sauce with Greek yogurt, salt, a tomato and a small piece of onion - I chop the vegetables and mix everything together.
Wash the wings and drain the water or dry the wings with paper towels.
Cut off the tips of the wings so they don't burn in the oven. Cut the wing in smaller halves, as you can see in the picture.
We will only use these 2 parts of the wing for this recipe.
Repeat procedure for all the wings and place them in a deep bowl.
In a smaller bowl, mix baking powder, salt, paprika, garlic and ground black pepper.
Spread the mixture over the wings.
And massage with your hands, until all sides are covered in spices.
For maximum crispiness it is recommended using a baking pan with a cooling rack. I don't have one, and so I place the wings on a regular baking sheet pan, lined with parchment paper. They are crispy, alright, so I don't stress too much about buying a new pan.
Bake in the preheated oven to 200 degrees C for about 30-40 minutes until they turn brown.
We served them with oven roasted cauliflower and yogurt sauce with tomatoes, onions and greens.
Be careful, they are addictive! :))
